Favorite Facebook Recipes from 2016

Great Looking but How Tasty are They?

So many wonderful-looking recipes are posted on Facebook! And now that You-tube provides the means to create time-lapse, visual instructions, they look even more enticing. But how tasty are they? Are they easy to prepare? Or, if the recipe requires multiple steps, is it worth the effort?

Here’s my take on the recipes I saved in 2016. I’ll start with the ones I’ve tried and liked best, then move on to a couple that I wouldn’t make again. Finally, I’ll share a few that I intend to try early in 2017.

Look Good and Taste Good

Zuppa Toscana

This soup is creamy and absolutely delicious. It’s easy to fix and makes enough to feed a crowd. Add bread and you have a hearty meal.

Turkey, Kale, and Butternut Squash Soup

This is now my go-to vegetable soup. It’s not as calorie-laden as the Zuppa Toscana, but it’s tasty and satisfying. Since the recipe yields such a huge a amount, I modified it, cutting all ingredients in half except the canned beans, and using 6 cups of vegetable broth (I used chicken broth).

Chicken Bacon Ranch Layer Salad

I love this salad! When I made it, I served it as a side dish, eliminating the chicken and serving the dressing on the side. I will definitely make it again to serve as a main dish. Very versatile, and a major plus is that it can be prepared and assembled ahead of time. Requires a few steps but well worth the effort!

 

Chicken Bacon Ranch Layer Salad

Oven Baked Spicy Chicken Tacos

What a great alternative to ground meat tacos! They’re easy, cheap, and delicious. Minimum prep time, especially if you use rotisserie chicken, which I did.

Slow Cooker Beef Stroganoff

Ultra-easy and awfully good! I’m making it again tonight, in fact. Not quite as rich or salty as traditional stroganoff, and that’s a plus for everyday meal planning. I’m serving it over egg noodles, with a side salad.

Creamy Cucumber Salad

This is a refreshing dish and especially good for winter, when the cucumbers are so seedy. Quick, easy, and healthy.

Cheesecake Cupcakes with Chocolate Ganache

I’ll definitely make this recipe again. It’s easy and tasty and I like the individual, moderate portions. I may try it next time with mini cupcake papers and mini Oreos for bite-sized portions.

Tried But Would Not Make Again

Apple-Cream Cheese Bundt Cake

A beautiful cake but definitely not worth the effort for the taste. My mother-in-law used to make a plum cake with baby plums and nuts that took only minutes to prepare. You could add a caramel icing and the result would surpass this cake, perhaps not in looks but definitely in taste. (I’ll find that recipe and post it later.)

Slow Cooker Rotisserie Chicken

I love recipes with beer, but this one does nothing for the chicken, in my humble opinion. It’s just too easy to get similar results from buying a rotisserie chicken from the grocery store or cooking one in the crockpot with some barbecue sauce or just a little salt and pepper. You may disagree.

On My List to Try in 2017

Homemade Dinner Rolls

If Sister Shubert didn’t make such good rolls and I weren’t trying to skip bread, I’d have made these already. They really do look good and easy.
