  • Breakfast–Eggs fried in clarified butter, fresh berries with coconut cream
  • Lunch–Pork chop and sugar snaps from last night, dates
  • Snack–Plantain chips, apple
  • Dinner–Ground beef with taco seasoning over julienne strips of zucchini; lettuce and tomato with homemade ranch dressing, sliced avocados, Luna Bar

I found a good recipe for Taco seasoning that does not contain sugar or any artificial ingredients. I used it to flavor the ground chuck and then put the meat over a bed of zucchini and yellow squash, in julienne strips, sautéed in clarified butter. I’m not crazy about the taste of spaghetti squash, used for that purpose, and found the zucchini much more tasty.

Taco Seasoning

1T chili powder

1/4 tsp garlic powder

1/4 tsp onion powder

1/4 tsp crushed red pepper flakes

1/4 tsp oregano

1/2 tsp paprika

1 and 1/2  tsp cumin

1 tsp salt

1 tsp pepper

I used 3 tablespoons in the browning meat and added about 1/2 cup of water.

 

Tool for Making Julienne Strips

This a great set of tools for making julienne strips. I bought it at Bed, Bath, and Beyond. Both are easy to use. With the one on the right, you lay the zucchini flat and pull the instrument across it lengthwise. It has little groves that cut about 10 tiny strips at a time. The one on the left is a peeler, which will slice wider strips of carrots or other veggies and will allow you to make carrot curls.
