I love to fix barbecue chicken thighs and legs in the crockpot, but I couldn’t find a barbecue sauce without sugar. I finally found the recipe posted below and made my own sauce. The results were excellent. The recipe makes 3 cups and I only used half of it. I’m saving the rest for another meal.

Paleo Whole30 Barbecue Sauce

6 oz. can tomato paste

14.5 oz. can fire roasted diced tomatoes

1/2 cup coconut vinegar or apple cider vinegar

1/2 cup pitted dates (about 8 Medijool dates)

1/2 cup bone broth or water

tsp. garlic powder

tsp. onion powder

tsp. salt

1/2 tsp red pepper flakes

1 T chili powder

tsp yellow mustard

2 tsp smoked paprika

1/2 tsp hot sauce ( I omitted this)

3 T bacon fat or coconut oil

Cook all ingredients in a large pot for 10 minutes. Blend ingredients with immersion blender or regular blender. Return to heat and cook until desired thickness. Add broth or water if needed.

 

Crockpot Barbeque Chicken

1 package organic bone-in chicken thighs

1 package organic bone-in chicken legs (I used the Smart Chicken from Harris Teeter)

Salt and pepper chicken. Place in crockpot and cover with barbecue sauce. Cook 6 hours on low. I’ve cooked it for 8-10 hours, but to me the chicken is overdone and not as good. I’ve also used white meat, but to me the dark is so much more moist and flavorful.

Breakfast–Fried eggs and spinach sautéed with garlic

  • Lunch–Leftover chicken salad with cashews, celery, and onion
  • Snack–cashews
  • Dinner–Barbeque chicken legs and thighs, leftover sweet potato and haricots verts, apple sauce, dates.
  • Reached my goal of 10,000 steps on Fitbit.
